
Healthy Pancakes
Hands up 🙋♀️ who is excited for pancake Tuesday. I certainly won’t win a photography award for this photo of my pancakes 🙈, but it’s a recipe that I have to share. In this house pancakes are a big part of our weekly eating plans – we have them every Saturday/Sunday and they might sneak in an appearance mid-week.
This recipe is a healthy one but so delicious 😋 and an ideal pre or post workout snack (If you add any protein powder just make sure to add extra yoghurt to balance the consistency). The kids love them and you can play with various toppings. We like to stew some frozen raspberries and then pour maple syrup on top.
Ingredients
Serves 4
▶️ 100g Oats
▶️ 1 tsp baking powder
▶️ 4 eggs 🥚
▶️ 1tsp vanilla extract
▶️ 2 large bananas 🍌
▶️ 4 heaped tbsp natural Greek yoghurt
▶️ Frozen Raspberries
▶️ Maple syrup/honey (optional)
▶️ 1 tbsp Coconut oil (for pan)
Method:
▶️ Put the frozen raspberries in a pot and stew over a gentle heat
▶️ Blend oats to make an oat flour and add in the baking powder.
▶️ Blend in the 4 eggs
▶️ Add vanilla extract
▶️ Blend in the bananas
▶️ Blend in the yoghurt
▶️ Cook over a medium heat as per regular pancakes. I use a coconut oil in the pan but you may not need any depending on your pan.
I normally stack 3-4 pancakes with raspberries and then pour over the syrup – yum, yum!
